Crust Preparation

Make the Dough
In a medium mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together.

Chill the Dough
Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Roll and Cut the Dough
On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut into 3-inch circles and place them into a greased mini tartlet pan.

Bake the Crust
Prick the bottom of each tartlet shell with a fork and bake in the preheated oven for 15-18 minutes, or until lightly golden. Remove from oven and let cool.

In a mixing bowl, combine the goat cheese, cream cheese, honey, fresh thyme leaves, and black pepper. Using a hand mixer or a whisk, beat the mixture until smooth and creamy.

Spoon the whipped goat cheese filling into each cooled tartlet shell, smoothing the top with a spatula.

Sprinkle the salted hazelnuts on top of the filled tartlets. Drizzle with balsamic glaze and garnish with fresh chives.
