    Prepare the Wings

    Rinse the chicken wings under cold water and pat them dry with paper towels. This helps the skin become crispy when cooked.

    Season the Wings

    In a large bowl, combine the olive oil, salt, and black pepper. Add the chicken wings and toss until they are evenly coated with the seasoning.

Cooking

    Preheat the Smoker

    Preheat your smoker to 225°F (107°C). Make sure to have your favorite wood chips ready for smoking.

    Smoke the Wings

    Place the seasoned wings on the smoker rack, ensuring they are not overcrowded. Smoke the wings for about 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C).

Saucing or Dry Rubbing

    Choose Your Flavor

    Once the wings are cooked, you can either toss them in your prepared BBQ sauce or coat them with the dry rub mixture.

    BBQ Sauce Application

    If using BBQ sauce, place the cooked wings in a large bowl, add the BBQ sauce, and toss until evenly coated.

    If using the dry rub, combine paprika, garlic powder, onion powder, brown sugar, cayenne pepper, black pepper, salt, and dried thyme in a bowl. Sprinkle the dry rub over the wings and toss until coated.
