    Preheat Oven

    Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease it with non-stick spray.

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, cornmeal, baking powder, baking soda, salt, and sugar until well combined.

    Combine Wet Ingredients

    In another bowl, whisk together the milk, eggs, and melted unsalted butter until smooth.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients, and gently mix until just combined. Do not overmix.

    Add Jalapenos

    Fold in the diced smoked jalapenos until evenly distributed throughout the batter.

    Fill Muffin Tin

    Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

    Bake

    Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

    Remove from oven and let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Honey Butter

    Prepare Honey Butter

    In a medium bowl, beat the unsalted butter with a hand mixer or spatula until smooth and creamy.

    Add Honey

    Gradually mix in the honey until well combined. Adjust sweetness to taste.

    Serve

    Serve the honey butter alongside the warm smoked jalapeno cornbread muffins.
