Shrimp & Grits Fritter Recipe

For the Grits

Method

Prepare the Grits

    Boil Water

    In a medium saucepan, bring 4 cups of water to a boil.

    Cook Grits

    Once boiling, add 1 cup of grits and 1 tsp of salt. Stir well, reduce heat to low, cover, and cook for 20-25 minutes, stirring occasionally until thickened.

    Add Butter and Cheese

    Remove from heat, stir in 2 tbs of butter and 1 cup of shredded cheese (if using) until melted and fully combined. Spread the grits in a shallow dish and let cool completely.

Prepare the Shrimp Fritters

    Chop Shrimp

    Chop the shrimp into small pieces and place them in a large mixing bowl.

    Mix Ingredients

    Add the chopped scallions, 2 tbs of cajun hot sauce, zest and juice of 1 lemon, 1 large egg, 1 cup of flour, and 1 tsp of black pepper to the bowl. Mix until well combined.

    Combine with Grits

    Once the grits are fully cooled, add about 1 cup of the prepared grits to the shrimp mixture. Mix thoroughly until combined.

    Heat Oil

    In a large skillet, heat 2 cups of oil over medium heat until hot.

    Fry Fritters

    Scoop tablespoon-sized portions of the shrimp and grits mixture and carefully drop them into the hot oil. Fry for 3-4 minutes on each side until golden brown. Remove and drain on paper towels.
