Preparation Directions

  1. 1

    Cook the Potatoes

Start by washing the potatoes thoroughly. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil over medium heat, then reduce to a simmer. Cook until the potatoes are tender, approximately 15-20 minutes.

  2. 2

    Cool and Chop

Once the potatoes are cooked, drain them and let them cool for about 10 minutes. After they are cool enough to handle, chop them into bite-sized pieces and place them in a large mixing bowl.

  3. 3

    Prepare the Dressing

In a separate bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper until well combined.

  4. 4

    Combine Ingredients

Add the chopped potatoes, diced celery, and diced red onion to the mixing bowl with the potatoes. Pour the dressing over the potato mixture and gently fold everything together until well coated.

  5. 5

    Garnish and Chill

Sprinkle fresh parsley and paprika over the top of the salad for garnish. Cover the bowl with plastic wrap and refrigerate for at least 1 hour before serving to let the flavors meld.
