Method

Preparation of Meats

  1. 1

    Prepare the Beef Brisket

Trim any excess fat from the brisket and season generously with the rub mixture.

  2. 2

    Prepare the Pork Ribs

Remove the membrane from the back of the ribs. Apply a layer of the rub mixture all over the ribs.

  3. 3

    Prepare the Smoked Sausage

Slice the sausage into 1-inch pieces. Set aside for grilling.

Making the Marinade and Rub

  1. 4

    Mix the Dry Rub

In a bowl, combine brown sugar, paprika, black pepper, salt, garlic powder, onion powder, and cayenne pepper. Mix well.

  2. 5

    Prepare the Marinade

In a separate bowl, whisk together apple cider vinegar and water. Use this mixture to marinate the meats for at least 2 hours or overnight.

Cooking the Meats

  1. 6

    Cook the Beef Brisket

Preheat your smoker to 225°F (107°C). Place the brisket in the smoker and cook for approximately 1 to 1.5 hours per pound, until it reaches an internal temperature of 195°F (90°C).

  2. 7

    Cook the Pork Ribs

Place the ribs in the smoker alongside the brisket and cook for 5-6 hours, until tender. Wrap in foil during the last hour to help them stay moist.

  3. 8

    Grill the Smoked Sausage

During the last 30 minutes of cooking, grill the sausage pieces over medium heat until browned and heated through.

Preparing Sides

  1. 9

    Make the Cornbread

Prepare cornbread according to your favorite recipe or package instructions. Bake until golden brown.

  2. 10

    Prepare the Coleslaw

Mix shredded cabbage and carrots with coleslaw dressing in a bowl. Refrigerate for at least 30 minutes before serving.
