Method

Preparation

  1. 1

    Prepare the Ingredients

Chop the onion, bell pepper, and mince the garlic. Drain and rinse the kidney and black beans, and drain the corn.

  2. 2

    Shred the Chicken

If not already shredded, shred the hickory smoked chicken using two forks or your hands.

Cooking

  1. 3

    Sauté Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 5 minutes until softened. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

  2. 4

    Add Spices

Stir in the chili powder, cumin, salt, black pepper, and cayenne pepper. Cook for 1-2 minutes, stirring continuously to toast the spices.

  3. 5

    Combine Ingredients

Add the shredded hickory smoked chicken, diced tomatoes, kidney beans, black beans, corn, and chicken broth to the pot. Stir well to combine all ingredients.

  4. 6

    Simmer the Chili

Bring the mixture to a boil, then reduce heat to low and let simmer uncovered for 20-25 minutes, stirring occasionally. The chili should thicken slightly.

Serving

  1. 7

    Serve the Chili

Ladle the chili into bowls and top with optional sour cream, shredded cheese, and chopped green onions as desired. Enjoy!
