Preparing the Beans

    Soak the Beans

    In a large bowl, combine 2 cups of dried navy beans with 6 cups of water. Let it soak overnight or for at least 8 hours.

    Drain and Rinse

    After soaking, drain the beans and rinse them under cold water to remove any impurities.

Cooking the Beans

    Cook the Beans

    In a large pot, add the soaked beans along with 6 cups of fresh water. Bring to a boil, then reduce heat and let it simmer for about 1 hour or until beans are tender.

    Prepare the Flavorings

    While the beans are cooking, in a separate skillet, cook 6 slices of hickory smoked bacon until crispy. Remove the bacon, chop it, and set it aside. In the same skillet, sauté 1 cup of chopped onion until translucent, then add 4 minced garlic cloves and cook for an additional minute.

Combining and Baking

    Mix Ingredients

    Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the cooked beans, sautéed onion and garlic, chopped bacon, 1 cup of brown sugar, 1 cup of ketchup, 2 tbs of mustard, 1 tbs of apple cider vinegar, 2 tbs of Worcestershire sauce, 1 tsp of salt, and 1 tsp of black pepper.

    Bake the Beans

    Transfer the mixture to a large baking dish. Cover with aluminum foil and bake in the preheated oven for 1 hour. Remove the foil and bake for an additional 30 minutes to allow the top to caramelize.
