Method

Brownie Base

  1. 1

    Preheat Oven

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.

  2. 2

    Melt Butter

In a medium saucepan, melt the unsalted butter over low heat. Remove from heat and let cool slightly.

  3. 3

    Mix Sugars

In a large mixing bowl, combine the granulated sugar and brown sugar. Pour in the melted butter and mix thoroughly.

  4. 4

    Add Eggs and Vanilla

Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

  5. 5

    Combine Dry Ingredients

In another bowl, whisk together the cocoa powder, flour, salt, and chocolate chips.

  6. 6

    Combine Mixtures

Gradually add the dry mixture to the wet mixture, stirring until just combined. Do not overmix.

  7. 7

    Bake Brownies

Pour the brownie batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

  8. 8

    Cool Brownies

Once baked, remove from the oven and let the brownies cool in the pan for at least 20 minutes before icing.

Icing

  1. 9

    Prepare Icing

In a mixing bowl, combine the powdered sugar, cocoa powder, softened butter, heavy cream, vanilla extract, and a pinch of salt.

  2. 10

    Mix Icing

Using an electric mixer, beat the icing mixture until smooth and creamy. Adjust the consistency with more cream if needed.

  3. 11

    Spread Icing

Once the brownies are cool, spread the icing evenly over the top using a spatula.

Garnish

  1. 12

    Garnish Brownies

Sprinkle chocolate shavings over the icing and add fresh mint leaves for garnish.

  2. 13

    Slice and Serve

Cut the brownies into squares and serve chilled or at room temperature.
