    Boil the Eggs

    Place the eggs in a single layer in a saucepan and cover them with cold water. Bring the water to a boil over medium heat.

    Simmer and Cool

    Once the water reaches a boil, cover the saucepan with a lid, remove it from heat, and let it sit for 12 minutes. After 12 minutes, transfer the eggs to a bowl of ice water to cool for about 5 minutes.

    Peel the Eggs

    After cooling, gently tap each egg on a hard surface and peel off the shell. Rinse the peeled eggs under cold water to remove any bits of shell.

Filling

    Prepare the Filling

    Cut each peeled egg in half lengthwise. Carefully remove the yolks and place them in a mixing bowl. Set the egg whites aside.

    Mix the Yolk Mixture

    To the bowl with the yolks, add mayonnaise, Dijon mustard, white vinegar, salt, black pepper, and smoked paprika. Mash everything together with a fork until smooth and creamy.

    Fill the Egg Whites

    Using a spoon or a piping bag, fill each egg white half with the yolk mixture, heaping it slightly over the top.

    Garnish and Serve

    Sprinkle the filled eggs with additional smoked paprika and garnish with fresh chives or parsley. Serve immediately or refrigerate until ready to serve.
