Basil Oil Preparation

Prepare the Basil Oil
In a blender or food processor, combine 1 cup of fresh basil leaves, 1 cup of extra virgin olive oil, and 1 tsp of salt. Blend until smooth and well combined. Strain the mixture through a fine-mesh sieve or cheesecloth into a bowl to remove the solids, pressing down to extract as much oil as possible. Set aside.

Assemble the Skewers
Take a skewer (or toothpick) and thread one heirloom cherry tomato onto it, followed by a fresh basil leaf, and then a mozzarella ball. Repeat this process until all ingredients are used, typically yielding 12 skewers.

Drizzle Balsamic
Once all skewers are assembled, arrange them on a serving platter. Drizzle 2 tablespoons of balsamic vinegar over the skewers to enhance flavor.

Finally, drizzle the prepared basil oil over the skewers for a fresh, aromatic finish. Serve immediately.
