Preparing the Brisket

    Season the Brisket

    In a small bowl, mix together salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this seasoning mix all over the brisket point, ensuring an even coating.

    Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Place the seasoned brisket point on the smoker and smoke for about 6-8 hours, or until it reaches an internal temperature of 195°F (90°C).

    Rest the Brisket

    Once the brisket is cooked, remove it from the smoker and wrap it in foil. Let it rest for at least 30 minutes.

Making the BBQ Sauce

    Combine Ingredients

    In a medium saucepan over medium heat, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, and black pepper. Stir until well mixed.

    Simmer the Sauce

    Bring the mixture to a simmer and let it cook for about 10 minutes, stirring occasionally. Adjust seasoning with hot sauce to taste.

Preparing the Burnt Ends

    Cut the Brisket

    After resting, cut the brisket into 1-inch cubes.

    Fry the Burnt Ends

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Carefully add the brisket cubes in batches and fry until they are crispy, about 2-3 minutes.

    Toss in BBQ Sauce

    Remove the brisket cubes from the oil and place them in a large bowl. Pour the BBQ sauce over the crispy burnt ends and toss to coat evenly.
