Method

Preparing the Salmon

  1. 1

    Season the Salmon

Pat the salmon fillets dry with paper towels. Drizzle olive oil over the fillets and rub it in. Season both sides with salt and black pepper. Drizzle the lemon juice over the top and let them marinate for about 15 minutes.

  2. 2

    Preheat the Oven

While the salmon is marinating, preheat your oven to 400°F (200°C).

Making the Blackberry Sauce

  1. 3

    Cook the Blackberries

In a saucepan over medium heat, combine the blackberries, honey, balsamic vinegar, minced garlic, and thyme. Stir gently to combine and bring to a simmer.

  2. 4

    Reduce the Sauce

Let the mixture simmer for about 10-15 minutes until the blackberries break down and the sauce thickens slightly. Season with salt and black pepper to taste. Remove from heat and set aside.

Cooking the Salmon

  1. 5

    Bake the Salmon

Place the marinated salmon fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for about 12-15 minutes, or until the salmon flakes easily with a fork.

  2. 6

    Serve

Remove the salmon from the oven and spoon the blackberry sauce over the top. Serve immediately with your choice of sides.
