Preparation

    Prepare the Brisket

    Trim any excess fat from the brisket and cut it into 1-inch cubes.

    Make the Rub

    In a bowl, combine brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Mix well.

    Rub the Meat

    Coat the brisket cubes evenly with the rub mixture. Ensure all sides are covered. Let it sit for at least 30 minutes to absorb the flavors.

Cooking

    Preheat the Smoker/Grill

    Preheat your smoker or grill to 225°F (107°C). Make sure it’s ready for indirect cooking.

    Smoke the Brisket

    Place the rubbed brisket cubes in the smoker or on the grill. Smoke for about 3 hours, or until they develop a nice bark.

    Prepare the Sauce

    In a saucepan, combine BBQ sauce, honey, and apple cider vinegar. Heat over low heat until warm, stirring occasionally.

    Sauce the Burnt Ends

    After 3 hours, remove the brisket from the smoker/grill and toss the cubes in the prepared sauce. Return the sauced brisket to the smoker/grill.

    Finish Cooking

    Cook the sauced brisket for another 2 hours, or until tender and caramelized.

Serving

    Serve

    Remove the burnt ends from the grill/smoker, let them rest for a few minutes, then serve hot with additional BBQ sauce on the side if desired.
