Prepare Potatoes

    Bake the Potatoes

    Preheat the oven to 400°F (200°C). Scrub the Russet potatoes under cold running water to remove any dirt. Prick each potato several times with a fork to allow steam to escape during baking. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender and can be easily pierced with a fork.

Make the Filling

    Combine Filling Ingredients

    In a medium bowl, add the cooked shredded chicken, barbecue sauce, shredded cheddar cheese, chopped green onions, salt, and black pepper. Mix well until all ingredients are evenly coated with the barbecue sauce.

Stuff the Potatoes

    Stuff the Baked Potatoes

    Once the potatoes are done baking, remove them from the oven and let them cool for a few minutes. Carefully slice each potato in half lengthwise and use a fork to fluff the insides. Spoon the barbecue chicken filling generously into each potato half, packing it slightly.

Add Toppings

    Drizzle sour cream over the stuffed potato halves and sprinkle with extra chopped green onions. Serve warm and enjoy!
