Prepare the Chicken
Rinse the whole chicken under cold water and pat it dry with paper towels. Trim any excess fat and remove the innards from the cavity.

Make the Rub
In a small bowl, combine salt, black pepper, garlic powder, onion powder, paprika, smoked paprika, and brown sugar. Mix well to create a spice rub.

Season the Chicken
Rub the olive oil all over the chicken, making sure to cover it evenly. Then, apply the spice rub generously over the entire surface of the chicken, including inside the cavity.

Marinate
Place the seasoned chicken in a zip-top bag or a covered dish and pour the apple juice over it. Let it marinate in the refrigerator for at least 2 hours, preferably overnight.

Prepare the Smoker
Soak the hickory wood chips in water for at least 30 minutes before smoking. Preheat the smoker to 225°F (107°C).
