    Prepare the Steak

    Season the strip steak with salt and black pepper. Heat a grill or grill pan over medium-high heat and add a little olive oil. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for a few minutes.

    Caramelize the Onions

    While the steak is resting, slice the onion. In a skillet, heat a tablespoon of olive oil over medium heat. Add the sliced onion and a pinch of salt. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 10-15 minutes.

    Assemble the Sandwich

    Slice the Costanzos roll in half. Place the grilled steak on the bottom half of the roll, top it with the caramelized onions and the slices of provolone cheese. Optionally, you can place the sandwich under a broiler for a minute to melt the cheese.

    Serve

    Top with the other half of the roll, slice in half, and serve with steak sauce on the side.
