    Prepare the Fries

    Wash and cut the potatoes into fries. Soak them in cold water for 30 minutes to remove excess starch. Drain and pat dry.

    Fry the Potatoes

    Heat oil in a deep fryer or a large pot to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

    Cook the Steak

    Season the black angus strip steak with salt and black pepper on both sides. Heat a skillet over medium-high heat and add a tablespoon of olive oil. Once hot, add the steak and cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest.

    Sauté the Onions and Mushrooms

    In the same skillet, add another tablespoon of olive oil. Add sliced onions and cook until translucent, about 3 minutes. Add the mushrooms and cook until they are soft and browned, about 5 minutes. Season with salt and pepper.

    Assemble the Dish

    Slice the rested steak and place on a serving plate. Top with sautéed onions, mushrooms, and bleu cheese crumbles. Serve with hand-cut fries and a side of steak sauce.
