    Prepare the Home Fries

    Wash and dice the potatoes into small cubes. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, sprinkle with salt and pepper, and cook until golden brown and crispy, about 15-20 minutes, stirring occasionally.

    Cook the Steak

    Season the 8 oz black Angus strip steak with salt and pepper. In a separate skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the steak and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from the skillet and let rest for a few minutes.

    Fry the Eggs

    In the same skillet used for the steak, add 1 tablespoon of butter. Once melted, crack the 2 eggs into the skillet. Cook to your liking—sunny-side up, over-easy, or scrambled.

    While the eggs are cooking, toast the slices of bread in a toaster or on a skillet until golden brown.

    On a plate, arrange the home fries, place the cooked steak, top with the fried eggs, and serve with the toasted bread on the side.
