Directions

  1. 1

    Prepare the Tater Tots

Preheat your oven according to the instructions on the tater tots package. Spread the frozen tater tots evenly on a cast iron skillet and drizzle with olive oil. Season with salt and pepper.

  2. 2

    Cook the Tater Tots

Bake the tater tots in the preheated oven for about 20-25 minutes, or until crispy and golden brown. Stir halfway through for even cooking.

  3. 3

    Cook the Meat

While the tater tots are cooking, in a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels. In the same skillet, cook the breakfast sausage links until browned and cooked through. Remove and slice into pieces.

  4. 4

    Prepare the Eggs

In a separate pot, bring water to a simmer. Crack the eggs into individual cups and gently slide them into the simmering water. Poach the eggs for about 3-4 minutes until the whites are set but yolks are still runny. Remove with a slotted spoon.

  5. 5

    Assemble the Loaded Tots

Once the tater tots are done, layer the diced ham, sliced sausage, and crumbled bacon on top. Sprinkle shredded cheddar cheese evenly over the meat.

  6. 6

    Melt the Cheese

Return the skillet to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

  7. 7

    Add Hollandaise and Eggs

Drizzle the hollandaise sauce over the loaded tater tots and top with poached eggs.

  8. 8

    Serve

Serve immediately while hot, garnished with additional pepper if desired.
