Prepare Honey Chipotle BBQ Sauce
In a bowl, mix honey, chipotle peppers, and BBQ sauce together until well combined. Set aside.

Fry Pickled Red Onions
Heat vegetable oil in a frying pan over medium-high heat. Once hot, carefully add the pickled red onions and fry until crispy. Remove and place on paper towels to drain excess oil.

Assemble the Sandwich
On each hamburger bun, place a thick slice of pepper jack cheese, followed by a generous amount of the honey chipotle BBQ sauce, and top with fried pickled red onions.

Serve the sandwiches warm with extra BBQ sauce on the side if desired.
