    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into long strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes. This removes excess starch and helps make the fries crispier.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Fry the Potatoes

    Carefully add a batch of soaked potatoes to the hot oil. Fry for about 5-7 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Season

    While the fries are still hot, sprinkle with salt and pepper to taste.

    Serve

    Serve the hand-cut fries immediately with ketchup on the side.
