    Sauté the Base

    In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.

    Brown the Meats

    Add the ground elk and pork sausage to the pot. Cook until browned, breaking it apart as it cooks.

    Add Peppers

    Stir in the diced poblano, Anaheim, jalapeño, and red bell peppers. Cook for about 5 minutes until they begin to soften.

    Incorporate Spices and Tomatoes

    Add diced tomatoes and chipotle peppers. Stir well to combine.

    Pour in Broth

    Add beef broth and bring the mixture to a simmer. Reduce heat and let it cook for 45 minutes, stirring occasionally.

    Season and Serve

    Season with salt and pepper to taste. Serve hot, garnished with fresh cilantro or your favorite toppings.
