    Prepare the Sauce

    In a large skillet, heat the olive oil over medium heat. Add the diced bell pepper and onion, sautéing until softened, about 5 minutes.

    Add Garlic and Spices

    Stir in the minced garlic and crushed red pepper flakes, cooking for an additional 1-2 minutes until fragrant.

    Incorporate Tomatoes

    Pour in the canned crushed tomatoes, and season with salt and black pepper. Allow the sauce to simmer for about 10 minutes, stirring occasionally.

    Poach the Eggs

    Make small wells in the sauce and crack the eggs into each well. Cover the skillet and let the eggs poach in the sauce for about 5-7 minutes, or until the whites are set and the yolks are still runny.

    Add Goat Cheese

    Sprinkle the crumbled goat cheese over the top of the eggs and cover for another minute until the cheese softens.

    Garnish with chopped parsley and serve hot with fresh baked crostini on the side.
