Prepare the Ramekins
Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them with cocoa powder to prevent sticking. Place them on a baking sheet.

Melt Chocolate and Butter
In a double boiler or a microwave, melt the bittersweet chocolate and unsalted butter together until smooth. Stir occasionally to combine.

Mix Eggs and Sugar
In a mixing bowl, whisk together the eggs, egg yolks, and granulated sugar until pale and slightly thickened.

Combine Mixtures
Pour the melted chocolate mixture into the egg mixture, stirring gently to combine. Add the vanilla extract and a pinch of salt. Fold in the flour until just combined.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Bake
Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft and slightly jiggly.

Cool and Serve
Let the cakes cool for 1 minute, then run a knife around the edges to loosen. Invert onto plates. Serve immediately with a scoop of vanilla ice cream.
