Prepare the Dough
In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar. In a separate bowl, beat the eggs and then mix in the milk and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined.

Heat the Oil
In a deep pot or fryer, heat oil to 350°F (175°C). Ensure there’s enough oil to submerge the beignets.

Fry the Beignets
Using a spoon or cookie scoop, drop small amounts of the dough into the hot oil. Fry until golden brown, about 2-3 minutes per side. Do not overcrowd the pot.

Drain and Serve
Once fried, remove the beignets from the oil and drain on paper towels. While still warm, toss the beignets in powdered sugar and serve immediately.
