Method
Preparing Sushi Rice

Rinse the Rice
Place the sushi rice in a sieve and rinse under cold running water until the water runs clear, about 3-5 minutes. This removes excess starch from the rice.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed. Remove from heat and let it sit, covered, for an additional 10 minutes.

Season the Rice
In a small bowl, mix together the rice vinegar, sugar, and salt. Gently fold this mixture into the cooked rice using a wooden spatula, being careful not to mash the grains. Allow the rice to cool to room temperature.
Preparing Toppings

Slice the Yellowtail
Using a sharp knife, slice the yellowtail fillet into thin pieces, approximately 1/4 inch thick. Ensure to cut against the grain for better texture.

Prepare the Serving Condiments
Place wasabi in a small dish and soy sauce in a separate dipping bowl. Set aside.
Assembling Sushi

Shape the Sushi
With wet hands, take a small amount of sushi rice (about 1-2 tablespoons) and form it into an oval shape. Repeat until all rice is shaped.

Top with Yellowtail
Place a slice of yellowtail on top of each shaped rice ball. If using nori, place a strip around the rice before adding the fish.

Arrange the sushi on a plate and serve with wasabi, soy sauce, and pickled ginger on the side.
