    Prepare the Serrano Aioli

    In a small bowl, mix mayonnaise with finely chopped serrano peppers. Add salt and pepper to taste. Set aside.

    Cook the Bacon

    In a skillet over medium heat, cook bacon slices until crispy. Remove and place on a paper towel to drain excess fat.

    Cook the Wagyu Patty

    Season the wagyu beef patty with salt and pepper. In the same skillet, cook the patty over medium-high heat for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Melt the Cheese

    In the last minute of cooking the patty, place a slice of beehive cheddar on top to melt.

    Toast the Brioche Bun

    While the patty cooks, toast the brioche bun in the skillet until golden brown.

    Assemble the Burger

    Spread the fermented serrano aioli on the bottom half of the toasted brioche bun. Layer lettuce, tomato slices, the wagyu patty with melted cheese, crispy bacon, pickled onion, and top with the other half of the bun.
