Tofu Marinade

    Prepare the Tofu

    Press the firm tofu for about 15-20 minutes to remove excess moisture. Cut the tofu into cubes.

    Make the Marinade

    In a bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.

    Marinate the Tofu

    Add the cubed tofu to the marinade, ensuring all pieces are well-coated. Let it marinate for at least 30 minutes.

Vegetables

    Prepare the Vegetables

    While the tofu marinates, wash and slice all the vegetables (zucchini, bell pepper, carrot, red onion, and cherry tomatoes).

    Roast the Vegetables

    Preheat the oven to 200°C (400°F). Spread the prepared vegetables on a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to combine and roast for 25-30 minutes, or until tender.

Imam Cream

    Prepare the Imam Cream

    In a blender, combine the soaked cashews, minced garlic, lemon juice, water, and salt. Blend until smooth and creamy, adding more water if necessary to reach desired consistency.

Assembly

    Combine and Serve

    In a serving dish, layer the roasted vegetables and marinated tofu. Drizzle with the imam cream and garnish with fresh parsley and basil. Serve warm.
