Homemade Yoghurt Sorbet

Prepare Gelatin
Soak the gelatin sheets in cold water for about 10 minutes until softened.

Melt White Chocolate
In a heatproof bowl, melt the white chocolate over a double boiler or in the microwave until smooth. Set aside.

Heat Cream and Milk
In a saucepan, combine the heavy cream and milk. Heat over medium heat until just below boiling.

Combine Ingredients
Remove the saucepan from heat and add the soaked gelatin (squeezed of excess water) and fresh basil leaves to the cream and milk mixture. Stir until the gelatin is fully dissolved.

Mix with Chocolate
Pour the hot cream mixture over the melted white chocolate. Whisk until fully combined and smooth.

Chill Namelaka
Transfer the mixture to a container, cover, and refrigerate for at least 4 hours, or until set.
Strawberry Coulis

Prepare Strawberries
Wash and hull the fresh strawberries. Cut them into halves or quarters.

Blend Coulis
Remove from heat and let cool slightly. Blend the mixture until smooth. Strain through a fine mesh sieve to remove seeds if desired.

Cool Coulis
Let the coulis cool completely before using.
Homemade Yoghurt Sorbet

Combine Ingredients
In a mixing bowl, combine Greek yogurt, cooled sugar syrup, and lemon juice. Mix well until smooth.

Chill Mixture
Place the mixture in the refrigerator for about 30 minutes to chill.

Churn Sorbet
Transfer the chilled mixture to an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze Sorbet
Transfer the sorbet to an airtight container and freeze for at least 2 hours before serving.
