Clean the Mussels
Begin by rinsing the mussels under cold running water. Scrub the shells with a brush to remove any sand or debris. Discard any mussels that are open and do not close when tapped.

Prepare the Aromatics
Finely chop the lemongrass, garlic cloves, and chili peppers. If you prefer less heat, remove the seeds from the chili peppers before chopping.

Sauté the Aromatics
In a large pot, melt the unsalted butter over medium heat. Add the chopped lemongrass, garlic, and chili peppers. Sauté for 2-3 minutes until fragrant, stirring occasionally.

Steam the Mussels
Add the cleaned mussels to the pot and pour in a cup of water or white wine. Season with salt and black pepper to taste. Cover the pot with a lid and steam for about 5-7 minutes, or until all mussels have opened.

Serve
Once the mussels are cooked, remove them from the heat. Discard any mussels that have not opened. Serve hot, garnished with additional chopped chili or lemongrass if desired.
