Method
Lamb Shank

Sear the Lamb Shanks
In a large skillet, heat olive oil over medium-high heat. Season the lamb shanks with salt and black pepper. Sear the shanks for 3-4 minutes on each side until browned. Remove from skillet and set aside.

Combine Ingredients in Slow Cooker
Transfer the sautéed vegetables to a slow cooker. Add the seared lamb shanks, beef broth, rosemary, and thyme. Cover and cook on low for 6-8 hours or until the lamb is tender.

Prepare Vegetables
Preheat the oven to 375°F (190°C). In a large baking dish, combine zucchini, eggplant, potatoes, and red bell pepper.

Chill
Refrigerate the imam cream for at least 30 minutes before serving to allow flavors to meld.
Feta Cheese Brulee

Combine Ingredients
In a bowl, mix crumbled feta cheese, heavy cream, and egg yolk until well combined.

Bake
Pour the mixture into a small baking dish. Bake in a preheated oven at 350°F (175°C) for 20 minutes or until set.

Brulee the Top
Sprinkle brown sugar on top and use a kitchen torch to caramelize the sugar until golden brown.
Truffle Oil Drizzle

Just before serving, drizzle truffle oil over the plated lamb shank and vegetable briam for a finishing touch.
