Lamb Shank

Feta Cheese Brulee

Truffle Oil Drizzle

Method

Lamb Shank

  1. 1

    Sear the Lamb Shanks

In a large skillet, heat olive oil over medium-high heat. Season the lamb shanks with salt and black pepper. Sear the shanks for 3-4 minutes on each side until browned. Remove from skillet and set aside.

  2. 2

    Sauté Vegetables

In the same skillet, add diced onion, garlic, carrots, and celery. Sauté for about 5 minutes until softened.

  3. 3

    Deglaze with Wine

Pour in red wine to deglaze the skillet, scraping up any browned bits from the bottom. Cook for 2-3 minutes until slightly reduced.

  4. 4

    Combine Ingredients in Slow Cooker

Transfer the sautéed vegetables to a slow cooker. Add the seared lamb shanks, beef broth, rosemary, and thyme. Cover and cook on low for 6-8 hours or until the lamb is tender.

Vegetable Briam

  1. 5

    Prepare Vegetables

Preheat the oven to 375°F (190°C). In a large baking dish, combine zucchini, eggplant, potatoes, and red bell pepper.

  2. 6

    Season and Drizzle

Drizzle with olive oil, minced garlic, oregano, salt, and black pepper. Toss the vegetables to coat evenly.

  3. 7

    Bake

Cover the dish with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until vegetables are tender and lightly browned.

Imam Cream

  1. 8

    Mix Ingredients

In a bowl, combine Greek yogurt, minced garlic, lemon juice, and salt. Whisk until smooth and creamy.

  2. 9

    Chill

Refrigerate the imam cream for at least 30 minutes before serving to allow flavors to meld.

Feta Cheese Brulee

  1. 10

    Combine Ingredients

In a bowl, mix crumbled feta cheese, heavy cream, and egg yolk until well combined.

  2. 11

    Bake

Pour the mixture into a small baking dish. Bake in a preheated oven at 350°F (175°C) for 20 minutes or until set.

  3. 12

    Brulee the Top

Sprinkle brown sugar on top and use a kitchen torch to caramelize the sugar until golden brown.

Truffle Oil Drizzle

  1. 13

    Drizzle

Just before serving, drizzle truffle oil over the plated lamb shank and vegetable briam for a finishing touch.
