Method

Tuna Tartare Preparation

    Prepare the Tuna

    Dice the fresh tuna into small cubes and place it in a mixing bowl.

    Add Flavor

    Mix in the finely diced chili pepper, diced cucumber, and chopped pickled ginger. Toss gently to combine.

    Chill

    Cover the bowl with plastic wrap and refrigerate for at least 15 minutes to allow the flavors to meld.

Melon & Lime Dressing Preparation

    Blend the Dressing

    In a blender, combine the cubed melon, fresh lime juice, and honey or agave syrup. Blend until smooth.

    Taste and Adjust

    Taste the dressing and adjust sweetness or acidity if necessary by adding more honey or lime juice.

Plating and Serving

    Plate the Tartare

    Spoon the tuna tartare mixture onto a serving plate, shaping it neatly with a ring mold if desired.

    Drizzle the Dressing

    Drizzle the melon and lime dressing around the tartare on the plate.

    Place two scoops of lime sorbet on top of or beside the tartare.
