Panna Cotta Base

Method

Panna Cotta Preparation

  1. 1

    Bloom the Gelatin

In a small bowl, sprinkle the gelatin powder over 3 tablespoons of cold water. Let it sit for about 5 minutes until it becomes gelatinous.

  2. 2

    Heat the Cream Mixture

In a saucepan over medium heat, combine the heavy cream, whole milk, and 1 tablespoon of sugar. Stir occasionally until the mixture is warm but not boiling.

  3. 3

    Add Gelatin

Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved. Add the vanilla extract and mix well.

  4. 4

    Pour into Molds

Divide the mixture evenly among serving cups or molds. Cover and refrigerate for at least 4 hours, or until set.

Berry Sauce Preparation

  1. 5

    Cook the Berries

In a saucepan over medium heat, combine the mixed berries, 2 tablespoons of sugar, and lemon juice. Cook for about 5-7 minutes, stirring occasionally, until the berries break down and the mixture thickens slightly.

  2. 6

    Cool the Sauce

Remove from heat and let the sauce cool. Once cool, you can blend it for a smoother texture or leave it chunky, based on your preference.

  3. 7

    Serve

Once the panna cotta has set, carefully unmold it onto a plate. Drizzle the berry sauce over the top before serving.
