Lamb Marinade Preparation

Prepare the Marinade
In a large mixing bowl, combine olive oil, minced garlic, lemon juice, dried oregano, ground cumin, salt, and black pepper. Stir until well mixed.

Marinate the Lamb
Add the lamb to the bowl, ensuring it's evenly coated with the marinade. Cover and refrigerate for at least 1 hour, or ideally overnight for the best flavor.
Cooking the Lamb

Preheat the Grill
Preheat your grill to medium-high heat.

Grill the Lamb
Remove the lamb from the marinade and place it on the grill. Cook for about 8-10 minutes on each side, or until the internal temperature reaches 60°C (140°F) for medium-rare.

Rest the Meat
Once cooked, remove the lamb from the grill and let it rest for 5 minutes before slicing.

Chill the Sauce
Cover the tzatziki sauce and refrigerate until ready to use.
Assembling the Gyro

Slice the Lamb
Thinly slice the grilled lamb against the grain.

Prepare the Pita
Warm the pita bread on the grill for a few seconds on each side.

Assemble the Gyro
On each pita, layer slices of lamb, tzatziki sauce, sliced tomatoes, red onion, cucumber, and shredded lettuce.

Wrap the pita around the filling, and enjoy your homemade lamb gyro!
