Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Mix Ingredients

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center, then add the frothy yeast mixture and olive oil.

    Knead Dough

    Mix the ingredients until a dough forms. Knead on a floured surface for about 10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, or until doubled in size.

Filling Preparation

    Prepare Filling

    In a mixing bowl, combine feta cheese, cream cheese, and chopped chives. Mix until well combined and creamy.

Assembling and Baking

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Roll Out Dough

    After the dough has risen, punch it down and divide it into small balls. Roll each ball into a circle about 1/4 inch thick.

    Place a spoonful of the cheese filling in the center of each dough circle. Fold the dough over to create a half-moon shape and seal the edges.
