Hummus Preparation

Rinse and Drain Chickpeas
Open the can of chickpeas, pour into a colander, and rinse under cold water until the water runs clear. Set aside.

Combine Ingredients in Blender
In a food processor or blender, add the rinsed chickpeas, tahini, fresh lemon juice, garlic cloves (peeled), olive oil, and salt.

Add Flavor Enhancers
Add the lemon zest, ground cumin, paprika, turmeric, and black pepper to the blender.

Blend Until Smooth
Blend all the ingredients until smooth. If the hummus is too thick, add a little water (1 tablespoon at a time) until the desired consistency is achieved.
Crunchy Chickpeas Topping Preparation

Prepare the Chickpeas
Drain the second can of chickpeas and pat them dry with a kitchen towel.

Bake the Chickpeas
Spread the chickpeas on a baking sheet in a single layer. Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, or until golden and crunchy, shaking the pan halfway through.
Serving

Serve the Hummus
Transfer the blended hummus to a serving bowl, and top with the crunchy chickpeas. Drizzle with olive oil and sprinkle with additional paprika if desired.
