Method
Battered Cod

Prepare the batter
In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt. Gradually add the cold sparkling water, mixing until you achieve a smooth batter.

Heat the oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the cod
Dip each cod fillet into the batter, ensuring they are fully coated.

Fry the cod
Carefully place the battered cod fillets into the hot oil. Fry in batches for about 4-5 minutes or until golden brown and crispy. Remove from oil and place on paper towels to drain excess oil.

Make the aioli
In a bowl, combine the mayonnaise, minced garlic cloves, lemon juice, lemon zest, and salt. Stir well until all ingredients are thoroughly mixed. Adjust salt to taste.

Assemble the cod brioche
Cut the brioche buns in half and toast them lightly. Spread a generous amount of lemon aioli on the bottom half of each bun. Place a piece of fried cod on top, followed by a spoonful of beetroot pickles. Drizzle with sriracha sauce and top with the other half of the bun.
