Panacotta Preparation

Combine Ingredients
In a saucepan, combine coconut milk, agar-agar powder, sweetener, vanilla extract, and a pinch of salt. Whisk together until well combined.

Heat the Mixture
Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring constantly. Allow it to simmer for about 5 minutes to activate the agar-agar.

Set the Panacotta
Remove the saucepan from heat and pour the mixture into individual serving cups or molds. Let them cool at room temperature for about 10 minutes.

Chill
Transfer the cups to the refrigerator and let them chill for at least 4 hours or until set.

Prepare the Sauce
In a small saucepan, combine the mixed berries, sweetener, and lemon juice. Cook over medium heat, gently stirring, until the berries break down and form a sauce, approximately 5-7 minutes.

Remove from heat and let the sauce cool. If desired, blend for a smoother consistency.

Once the panacotta has set, remove it from the refrigerator. Top each serving with a spoonful of the berry sauce, a scoop of lime sorbet, and sprinkle with shredded coconut flakes.
