Marinate the Chicken

Prepare the Marinade
In a bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.

Add the diced chicken breast to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 30 minutes or up to 2 hours.
Cook the Rice

Rinse the Rice
In a fine mesh strainer, rinse the basmati rice under cold water until the water runs clear.

In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit, covered, for another 5 minutes.

Preheat the grill to medium-high heat. Thread the marinated chicken onto skewers. If using wooden skewers, soak them in water for 30 minutes to prevent burning.

In a large skillet, heat the olive oil over medium heat. Add the sliced bell peppers, red onion, and zucchini.
