Beef Tartare

Tomato and Aubergine Cream

Beef Tartare

    Prepare the Beef

    Finely chop the beef tenderloin and place it in a bowl.

    Mix Ingredients

    Add the egg yolk, Dijon mustard, chopped capers, finely chopped shallot, Worcestershire sauce, salt, and pepper to the beef. Mix well until evenly combined.

Tomato and Aubergine Cream

    Cook Aubergine

    In a pan, heat olive oil over medium heat. Add diced aubergine and sauté until soft (about 5-7 minutes).

    Add Tomatoes and Season

    Add the chopped tomatoes and minced garlic to the pan. Season with salt and pepper. Cook for another 10 minutes until the mixture is thickened.

    Blend into Cream

    Remove from heat and blend the mixture until smooth. Set aside to cool.

Potato Chips

    Prepare Potatoes

    Rinse and soak the thinly sliced potatoes in cold water for 30 minutes to remove excess starch.

    Fry Potato Chips

    Heat vegetable oil in a deep fryer or heavy pot to 180°C (350°F). Fry the potato slices in batches until golden and crispy. Remove and drain on paper towels. Season with salt while still hot.

Parmesan Custard

    Heat Cream

    In a saucepan, heat the heavy cream over low heat until warm, but not boiling.

    Combine with Egg Yolks

    In a bowl, whisk together egg yolks and grated parmesan cheese. Slowly add the warm cream while whisking continuously.

    Cook Custard Mixture

    Return the mixture to the saucepan and cook over low heat until it thickens slightly. Do not boil. Season with salt to taste. Strain if necessary and set aside to cool.

Garnish

    Prepare Garnish

    Finely chop the chives and zest the lime. Set aside for plating.
