Preparation of Pastry

    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Prepare the Baking Dish

    Grease a 9x13 inch baking dish with some melted butter.

    Layer Filo Pastry

    Unroll the filo pastry sheets and cover them with a damp cloth to prevent drying out. Place one sheet in the baking dish, brush with melted butter, and repeat this process for about 8 sheets.

Nut Filling

    Mix Nut Filling

    In a bowl, combine the chopped walnuts, chopped pistachios, sugar, and ground cinnamon. Mix well.

    Add Nut Filling

    Spread a layer of the nut mixture evenly over the layered filo pastry in the baking dish.

Assembling the Baklava

    Continue Layering

    Add 4 more sheets of filo pastry, brushing each with melted butter. Then, spread another layer of the nut mixture. Repeat this process until you have used up all the nuts and the last layer of filo sheets.

    Final Layer

    Finish with 8 more layers of brushed filo pastry on top, ensuring you butter each layer.

    Cut the Baklava

    Using a sharp knife, cut the baklava into diamond or square shapes before baking.

Baking and Syrup

    Bake

    Bake in the preheated oven for about 45-50 minutes or until golden brown.

    Prepare Syrup

    While the baklava is baking, prepare the syrup by combining sugar, water, honey, and vanilla extract in a saucepan. Bring to a boil, then reduce heat and let it simmer for 10 minutes.

    Pour Syrup Over Baklava

    Once the baklava is done baking, remove it from the oven and immediately pour the hot syrup over it. Allow it to cool completely before serving.
