Prepare the Ingredients
Chop garlic, shallots, and fine herbs. Dice heirloom tomatoes.

Cook the Linguini
In a large pot, bring salted water to a boil. Add the fresh linguini and cook according to package instructions until al dente. Drain and set aside.

Sauté the Prawns
In a large skillet over medium heat, add olive oil. Once hot, add the jumbo prawns and sauté for 2-3 minutes on each side until they are pink and opaque. Remove from skillet and set aside.

Combine All Ingredients
Add the cooked linguini, sautéed prawns, diced heirloom tomatoes, and fine herbs to the skillet. Toss everything together until well combined and heated through. Season with salt and black pepper to taste.

Serve
Plate the shrimp linguini, and sprinkle with Regiano Parmesan cheese before serving.
