Prepare the Ice Cream Layer

    Scoop the Ice Cream

    In a pie dish, scoop coffee ice cream and spread it evenly across the bottom. Place in the freezer to harden while you prepare the next layers.

Make the Chocolate Ganache

    Melt the Chocolate

    In a saucepan over low heat, combine dark chocolate and heavy cream. Stir until the chocolate is fully melted and smooth. Remove from heat and let cool slightly.

Prepare the Homemade Fudge

    Cook the Fudge

    In a saucepan, combine sugar, cocoa powder, and butter. Cook over medium heat until the mixture comes to a boil. Boil for 2-3 minutes, stirring constantly. Remove from heat and stir in vanilla extract. Allow it to cool slightly.

Make the Almond Brittle

    Prepare the Brittle

    In a saucepan, combine granulated sugar and butter. Cook over medium heat until the sugar melts and turns golden brown. Stir in the sliced almonds and pour the mixture onto a parchment-lined baking sheet. Let it cool completely before breaking into pieces.

Assemble the Mud Pie

    Layer the Ingredients

    Remove the ice cream from the freezer and pour the chocolate ganache over the ice cream layer. Then, gently spread the homemade fudge on top of the ganache. Finally, sprinkle the almond brittle pieces over the top.

    Freeze and Serve

    Return the assembled mud pie to the freezer for at least 2 hours to firm up. Slice and serve chilled.
