Preparation

    Prepare the Dashi Aioli

    In a bowl, mix the mayonnaise with dashi until well combined. Set aside.

    Cook the Potatoes

    Peel and julienne the potatoes. In a deep frying pan, heat oil and fry the potatoes until golden and crispy. Drain on paper towels and season with salt.

    Prep the Vegetables

    Trim the asparagus and slice the shiitake mushrooms. Rinse the baby spinach and set aside.

Cooking

    Cook the Fish

    In a large skillet, heat some olive oil over medium heat. Season the white fish fillets with salt and pepper, then add to the skillet. Cook for about 4-5 minutes on each side until cooked through and flaky.

    Sauté the Vegetables

    In the same skillet, add the asparagus and shiitake mushrooms. Sauté until tender, about 5-7 minutes. Add the baby spinach and sage, cooking just until the spinach wilts.

    Combine with Sauce

    Pour the tomato sauce over the sautéed vegetables and mix well. Simmer for a couple of minutes to heat through.

    Plating the Dish

    On a plate, serve a portion of the sautéed vegetables topped with the white fish. Drizzle with dashi aioli and garnish with crispy potato strings.
