Prepare the Croutons
Preheat oven to 375°F (190°C). Cut the brioche bread into small cubes. Spread on a baking sheet and toast in the oven for about 10-12 minutes or until golden brown, stirring halfway through.

Make the Salad Base
Wash the baby romaine lettuce thoroughly and dry it. Tear the leaves into bite-sized pieces and place them in a large salad bowl.

Add Anchovies and Cheese
Add the white anchovy fillets to the bowl with the romaine. Grate the Parmigiano Reggiano cheese and sprinkle it over the salad.

Dress the Salad
Drizzle your favorite classic Caesar dressing over the salad. Toss gently to combine all ingredients.

Add Croutons
Once the croutons are ready, let them cool slightly, then add them to the salad and toss again.

Serve the Caesar salad immediately, garnished with extra Parmigiano Reggiano if desired.
