Method

Beef Tenderloin Preparation

    Sear the Beef

    In a large pot, heat olive oil over medium-high heat. Season the beef tenderloin with salt and pepper. Sear the beef on all sides until browned, about 4-5 minutes per side.

    Braise the Beef

    Add diced onion, minced garlic, bay leaves, and beef broth to the pot. Bring to a simmer, then reduce the heat to low. Cover and cook for 3-4 hours, or until the beef is tender and shreds easily.

    Shred the Beef

    Remove the beef from the pot and let it cool slightly. Shred the beef using two forks, then return it to the pot with the juices to keep it moist.

Tobasco Onions Preparation

    Prepare the Onions

    In a bowl, mix the buttermilk with Tabasco sauce. Dip the sliced onions into the buttermilk mixture, then dredge in flour to coat.

    Fry the Onions

    Heat vegetable oil in a deep skillet over medium heat. Fry the coated onions until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Garlic Aioli Preparation

    Mix the Aioli

    In a small bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix well and set aside.

Assembly

    Assemble the Sammie

    Toast the crusty bread or hoagie rolls. Layer shredded beef, aged white cheddar, and crispy Tobasco onions on the bread. Drizzle with garlic aioli and serve with au jus on the side.
