Prepare the Batter

In a large mixing bowl, combine the aged white cheddar, chopped Calabrian chilies, green tomato marmalade, cooked bacon, flour, cornmeal, baking powder, salt, and black pepper. Mix until well combined.

Add Wet Ingredients

In a separate bowl, whisk together the beaten eggs and milk. Gradually add the wet mixture to the dry ingredients, stirring until just combined. Be careful not to overmix.

Heat the Oil

In a deep skillet or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fritters

Using a spoon or cookie scoop, drop spoonfuls of the batter into the hot oil. Fry in batches, cooking for 3-4 minutes on each side or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.

Serve the fritters warm with additional green tomato marmalade on the side for dipping.
