Make the Graham Cracker Crust

Preheat the oven to 350°F (175°C). In a mixing bowl, combine crushed graham crackers, melted butter, and sugar. Press the mixture into the bottom and up the sides of a 9-inch pie pan. Bake for 10 minutes, then remove from the oven and let it cool.

Prepare the Butterscotch Filling

In a saucepan over medium heat, heat the heavy cream until just simmering. Remove from heat and stir in butterscotch chips until melted and smooth. In a bowl, whisk together eggs. Gradually add the warm butterscotch mixture to the eggs, whisking constantly to prevent curdling. Stir in smoked coconut and chopped pecans.

Combine and Bake

Pour the butterscotch mixture into the prepared graham cracker crust. Bake in the preheated oven for 25-30 minutes, or until set. Let cool to room temperature before refrigerating for at least 2 hours.

Bourbon Anglaise Preparation

Make the Bourbon Anglaise

In a saucepan, combine milk and sugar over medium heat until the sugar dissolves. In a bowl, whisk egg yolks. Gradually add the warm milk mixture to the yolks, whisking constantly. Return to the saucepan and cook on low heat until thickened. Stir in bourbon and let cool.

Slice the chilled iron bar into squares and serve drizzled with the bourbon anglaise.
