Prepare the Baguette

Slice the baguette into 1/2 inch thick pieces. Toast them in the oven at 375°F (190°C) for about 5-7 minutes or until golden brown.

Fry the Capers

In a small skillet over medium heat, add the capers and fry them until they become crispy, about 3-4 minutes. Drain on paper towels.

Prepare the Red Onion

Thinly slice the red onion and soak in cold water for about 10 minutes to reduce the sharpness. Drain and set aside.

Assemble the Bruschetta

Spread a layer of Boursin cheese on each toasted baguette slice. Top with a piece of house smoked salmon, a few confit tomatoes, a handful of baby arugula, and some fried capers.

Finish and Serve

Drizzle with cold pressed lemon oil, and season with salt and black pepper to taste. Serve immediately.
